    Sauté Vegetables

    In a large pot, heat olive oil over medium heat. Add the diced onion, garlic, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened and the onion is translucent.

    Add Mushrooms

    Add the sliced mushrooms to the pot and cook for another 5 minutes until they start to soften.

    Combine Ingredients

    Pour in the vegetable broth and add the white beans, thyme, salt, and black pepper. Bring the mixture to a boil.

    Simmer

    Reduce the heat and let the soup simmer for about 20 minutes to allow the flavors to meld together. Adjust seasoning if necessary.

Crispy Enoki Mushrooms

    Prepare Mushrooms

    Rinse the enoki mushrooms and pat them dry. Toss with cornstarch and salt until evenly coated.

    Heat Oil

    In a deep pan, heat the oil over medium-high heat until hot.

    Fry Mushrooms

    Carefully add the enoki mushrooms to the hot oil in batches. Fry for about 2-3 minutes until golden and crispy. Remove and drain on paper towels.

Pickled Scallions

    Make Pickling Liquid

    In a bowl, combine rice vinegar, sugar, and salt. Stir until the sugar and salt dissolve.

    Pickle Scallions

    Add the sliced scallions to the pickling liquid and let them sit for at least 30 minutes to pickle.

Herb Oil

    Blend Herb Oil

    In a blender, combine olive oil, fresh herbs, minced garlic, and salt. Blend until smooth and well combined.
