Brioche Bun Directions

Prepare the Dough
In a mixing bowl, combine the flour, sugar, yeast, and salt. In a separate bowl, whisk together the eggs and milk. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.

Knead the Dough
Add the softened butter and knead the dough for about 10 minutes until it becomes smooth and elastic.

Let the Dough Rise
Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Buns
Once risen, punch down the dough and divide it into 8 equal portions. Shape each portion into a ball and place them on a baking sheet lined with parchment paper.

Second Rise
Cover the buns with a cloth and let them rise again for about 30 minutes.

Bake the Buns
Preheat the oven to 375°F (190°C). Bake the buns for 15-20 minutes, or until golden brown.

Prepare the Patties
Season the Wagyu beef patties with salt and black pepper on both sides.

Assemble the Burger
Spread 2 tablespoons of roasted garlic aioli on the bottom half of each brioche bun. Place the cooked patties on top, followed by 2 tablespoons of bacon jam and 4 slices of pickles.

Top the Burger
Cover with the top half of the brioche bun and press down gently.
