Method

Salad Preparation

  1. 1

    Cook the Bulgar Wheat

In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of bulgar wheat, reduce heat to low, cover, and simmer for about 12-15 minutes until the water is absorbed and the bulgar is tender. Remove from heat and let cool.

  2. 2

    Prepare the Vegetables

While the bulgar is cooling, finely chop the fresh parsley and mint leaves. Dice the tomatoes and cucumber, and chop the green onions.

  3. 3

    Combine the Salad Ingredients

In a large bowl, combine the cooled bulgar wheat, parsley, mint, tomatoes, cucumber, and green onions. Mix well.

  4. 4

    Dress the Salad

In a small bowl, whisk together 1/4 cup of lemon juice, 3 tablespoons of olive oil, salt, and black pepper to taste. Pour the dressing over the salad and toss to combine. Adjust seasoning if necessary.

Salmon Preparation

  1. 5

    Prepare the Salmon

Preheat the grill or a skillet over medium-high heat. Rub the salmon fillets with 1 tablespoon of olive oil, 1 tablespoon of lemon juice, and season with salt and black pepper.

  2. 6

    Cook the Salmon

Place the salmon fillets on the grill or skillet. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

Assembly

  1. 7

Serve the Tabbouleh Salad with Salmon

Once the salmon is cooked, remove it from the heat and let it rest for a minute. Serve the tabbouleh salad on plates and top with the grilled salmon fillets. Enjoy your delicious tabbouleh salad with salmon!
