Beans
Miso Brown Butter
Method
Preparing the Beans
- 1
Trim the Beans
Rinse the green beans and yellow wax beans under cold water. Trim the ends of each bean using a sharp knife.
- 2
Blanch the Beans
Bring a large pot of salted water to a boil. Add the trimmed beans and blanch for about 3-4 minutes until they are bright green and tender-crisp. Drain and immediately plunge them into an ice bath to stop the cooking process.
- 3
Drain and Dry
Once the beans are cooled, drain them again and pat them dry with a clean kitchen towel.
Making Miso Brown Butter
- 4
Brown the Butter
In a medium saucepan over medium heat, add the unsalted butter. Cook, stirring frequently, until the butter begins to foam and turns a golden brown color, releasing a nutty aroma (about 5-7 minutes).
- 5
Add Garlic and Miso
Add the minced garlic cloves to the browned butter and sauté for about 1 minute until fragrant. Stir in the white miso paste until well combined.
- 6
Finish the Sauce
Remove the saucepan from heat and stir in the lemon juice, salt, and black pepper. Adjust seasoning to taste.
Combining and Serving
- 7
Toss the Beans
In a large mixing bowl, combine the blanched beans with the miso brown butter sauce. Toss gently to coat the beans evenly.
- 8
Garnish and Serve
Transfer the beans to a serving dish, sprinkle with fresh parsley, and serve warm.
