For the Whipped Cream

Method

Prepare the Strawberries

  1. 1

    Slice the Strawberries

Wash the fresh strawberries thoroughly under cold running water. Remove the green tops and slice the strawberries into halves or quarters, depending on their size.

  2. 2

    Add Sugar to Strawberries

In a mixing bowl, combine the sliced strawberries with 2 tablespoons of granulated sugar. Toss gently to coat the strawberries evenly. Let them sit for about 30 minutes to allow the juices to form.

Make the Shortcake

  1. 3

    Preheat Oven

Preheat your oven to 425°F (220°C).

  2. 4

    Mix Dry Ingredients

In a large mixing bowl, whisk together 2 cups of all-purpose flour, 1 tablespoon of granulated sugar, 1 tablespoon of baking powder, and 1 teaspoon of salt until well combined.

  3. 5

    Incorporate Butter

Cut 1 stick of unsalted butter into small cubes. Add the butter to the dry ingredients and use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.

  4. 6

    Add Cream and Vanilla

Pour in 1 cup of heavy cream and 1 teaspoon of vanilla extract. Stir gently with a spatula until the dough comes together. Do not overmix.

  5. 7

    Shape the Dough

Turn the dough out onto a floured surface and gently pat it into a rectangle about 1-inch thick. Cut out shortcakes using a round cookie cutter or a glass.

  6. 8

    Bake the Shortcakes

Place the cut shortcakes on a baking sheet lined with parchment paper. Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown. Remove from the oven and let cool slightly.

Make the Whipped Cream

  1. 9

    Whip the Cream

In a mixing bowl, pour 1 cup of heavy cream, 2 tablespoons of powdered sugar, and 1 teaspoon of vanilla extract. Using an electric mixer, whip the cream on medium-high speed until soft peaks form.

Assemble the Strawberry Shortcake

  1. 10

    Layer the Shortcake

Slice the baked shortcakes in half horizontally. Spoon a generous amount of the macerated strawberries over the bottom half of each shortcake.

  2. 11

    Add Whipped Cream

Top the strawberries with a dollop of whipped cream, then place the top half of the shortcake on top.

  3. 12

    Serve

Serve immediately and enjoy your delicious strawberry shortcake!
