Steak Preparation

Season the Steak
Generously season both sides of the ribeye steak with salt and black pepper. Let it sit at room temperature for about 30 minutes before cooking.

Sear the Steak
In a large skillet, heat olive oil over medium-high heat. Once hot, add the ribeye steak and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness.

Add Aromatics
During the last minute of cooking, add the smashed garlic cloves and the fresh rosemary to the skillet, basting the steak with the flavored oil.

Prepare the Potatoes
Peel the russet potatoes and cut them into thin strips, about 1/4 inch thick.

Dry the Potatoes
After soaking, drain the water and pat the potatoes dry with a clean towel.

Heat the Oil
In a deep fryer or a large pot, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the dried potato strips to the hot oil in batches, frying for about 5-6 minutes until golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.

Sprinkle the hot frites with salt while they are still hot, tossing to coat evenly.
