    Roast the Butternut Squash

    Preheat your oven to 400°F (200°C). Cut the butternut squash in half, remove the seeds, and place it cut-side down on a baking sheet. Roast for about 25-30 minutes, or until tender. Allow to cool, then scoop out the flesh and mash it lightly.

    Prepare the Sage

    Rinse the fresh sage leaves under cold water. Pat them dry with a paper towel.

Assembly

    Assemble the Sandwich

    Spread a generous amount of goat cheese on one slice of brioche bread. Top with the mashed roasted butternut squash and a few sage leaves. Place the second slice of brioche on top.

Cooking

    Grill the Sandwich

    In a skillet over medium heat, add a small amount of butter or olive oil. Once hot, place the assembled sandwich in the skillet. Grill each side for about 3-4 minutes, or until the bread is golden brown and the cheese is melted.

    If desired, prepare fries according to package instructions or toss mixed salad with your favorite dressing. Serve alongside the grilled cheese sandwich.
