Roast the Butternut Squash
Preheat your oven to 400°F (200°C). Cut the butternut squash in half, remove the seeds, and place it cut-side down on a baking sheet. Roast for about 25-30 minutes, or until tender. Allow to cool, then scoop out the flesh and mash it lightly.

Prepare the Sage
Rinse the fresh sage leaves under cold water. Pat them dry with a paper towel.

Assemble the Sandwich
Spread a generous amount of goat cheese on one slice of brioche bread. Top with the mashed roasted butternut squash and a few sage leaves. Place the second slice of brioche on top.
