Prep the Shrimp
Rinse the shrimp under cold water and pat dry with paper towels. Set aside.

Prepare the Tomatoes
Preheat the oven to 400°F (200°C). Toss the halved cherry tomatoes with olive oil, salt, and pepper, then spread them on a baking sheet and roast for about 15 minutes, or until they are soft and slightly caramelized.

Sauté the Garlic and Chiles
In a large skillet, melt the butter over medium heat. Add the minced garlic and finely chopped Calabrian chiles. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

Cook the Shrimp
Add the shrimp to the skillet and cook for about 3-5 minutes, stirring frequently, until they turn pink and are cooked through.

Add Lemon and Roasted Tomatoes
Stir in the lemon juice, lemon zest, and the roasted tomatoes. Cook for an additional 2 minutes to combine the flavors.

Prepare the Bread
While the shrimp is cooking, toast the slices of crusty bread until golden brown. Once toasted, sprinkle grated asiago cheese on top and return to the oven for about 2-3 minutes until the cheese is melted.

Serve the shrimp scampi hot, garnished with chopped parsley. Place the cheesy asiago bread on the side for dipping.
