Prepare the Grits

    Cook the Grits

    In a saucepan, bring 4 cups of water to a boil. Add 1 cup of white corn grits and 1 tsp of salt. Reduce heat to low and stir constantly until the mixture thickens, about 15-20 minutes.

    Add Butter and Cheese

    Once the grits have thickened, remove from heat and stir in 2 tbs of butter and 1 cup of cheddar cheese until melted and creamy.

Prepare the Shrimp and Sauce

    Cook Tasso Ham

    In a large skillet, heat 2 tbs of olive oil over medium heat. Add 4 oz of diced tasso ham and sauté for about 3-4 minutes until it starts to brown.

    Add Vegetables and Garlic

    Stir in 3 minced garlic cloves and 1 cup of diced red bell pepper. Cook for an additional 2-3 minutes until the vegetables are tender.

    Add Shrimp and Tomatoes

    Add 1 lb of peeled and deveined shrimp and 1 cup of canned diced tomatoes to the skillet. Season with 1 tsp of cayenne pepper and 1 tsp of black pepper. Cook until the shrimp turn pink and opaque, about 5-7 minutes.

Serve

    Plate the Dish

    Spoon the creamy grits onto a plate, then top with the shrimp and sauce mixture. Garnish with sliced scallions.
