Waffle Batter Preparation

    Mix Dry Ingredients

    In a large bowl, combine semolina flour, all-purpose flour, baking powder, salt, and sugar. Whisk together until evenly mixed.

    In another bowl, whisk together milk, eggs, and melted butter until well combined.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix; some lumps are okay.

Roasting Peaches

    Prepare Peaches

    Preheat your oven to 400°F (200°C). Halve the peaches and remove the pits.

    Roast Peaches

    Place the peach halves on a baking sheet cut side up. Drizzle with honey and sprinkle with cinnamon. Roast in the oven for 20-25 minutes, until soft and caramelized.

Making Brown Butter Granola

    In a saucepan over medium heat, melt the butter. Continue to cook, stirring frequently, until it turns golden brown and smells nutty. Remove from heat.

    In a large bowl, combine rolled oats, chopped nuts, and brown sugar. Pour the browned butter and vanilla extract over the mixture and stir until everything is well coated.

    Spread the granola mixture on a baking sheet and bake at 350°F (175°C) for about 20-25 minutes, stirring halfway through, until golden brown.

Cooking Bacon

    In a skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes per side. Drain on paper towels.

    Serve the waffles warm, topped with roasted peaches, a generous sprinkle of brown butter granola, and a drizzle of maple syrup. Serve the crispy bacon on the side.
