Method
Cooking the Rice
- 1
Rinse the Rice
Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.
- 2
Cook the Rice
In a medium saucepan, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the rice is tender and water is absorbed.
- 3
Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, remove from heat and gently fold in the vinegar mixture. Let it cool.
Preparing the Salmon
- 4
Marinate the Salmon
In a small bowl, mix together the soy sauce, sesame oil, garlic powder, and black pepper. Pour over the salmon fillet and let it marinate for at least 15 minutes.
- 5
Assembling the Bowl
- 6
Slice the Toppings
While the salmon is resting, slice the avocado and cucumber thinly, and chop the green onions.
- 7
Assemble the Bowl
In a bowl, layer the seasoned sushi rice as the base. Top with flaked salmon, avocado slices, cucumber, chopped green onions, a sprinkle of sesame seeds, and a side of pickled ginger.
