Preparing Sushi Rice

    Rinse the Rice

    Place the sushi rice in a sieve and rinse under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed rice and 2.5 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes or until the water is absorbed. Remove from heat and let it sit, covered, for 10 minutes.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Transfer the rice to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Preparing Fillings

    Prepare the Ingredients

    Slice the fresh salmon fillet into thin strips. Peel and slice the cucumber and avocado into thin strips as well.

Assembling Sushi

    Prepare the Sushi Roll

    Place a bamboo sushi mat on a clean surface and lay a nori sheet, shiny side down, on the mat.

    Add Rice

    Wet your hands to prevent sticking and take a handful of sushi rice, spreading it evenly over the nori, leaving a 1-inch border at the top.

    Add Fillings

    Place a few strips of salmon, cucumber, and avocado along the center of the rice.

    Roll the Sushi

    Using the mat, carefully roll the sushi away from you, pressing gently while rolling to keep it tight. Roll until the exposed edge of the nori sticks to the rice.

    Slice the Roll

    Using a sharp knife, slice the roll into 6-8 pieces, wiping the knife with a damp cloth between cuts to prevent sticking.

Serving

    Prepare the Sauce

    Pour soy sauce into a small bowl and add a dollop of wasabi on the side. Serve with pickled ginger.
