Rare Seared Tuna

    Prepare the Tuna

    Season the tuna steaks with salt, black pepper, and fennel pollen on both sides.

    Sear the Tuna

    Heat olive oil in a skillet over high heat. Once hot, add the tuna steaks and sear for 1-2 minutes on each side for rare, adjusting time according to prefered doneness.

Sherry Braised Peppers

    Prepare the Peppers

    Slice the bell peppers into strips.

    Sauté the Peppers

    In a saucepan, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Add the sliced peppers, salt, and black pepper, and sauté for 5 minutes.

    Add Sherry Vinegar

    Pour in the sherry vinegar and let the mixture simmer on low heat until the peppers are tender, about 15 minutes.

Charred Stone Fruit

    Halve the peaches and nectarines, removing the pits.

    Brush the cut sides with olive oil and honey. Grill on medium-high heat for about 3-4 minutes until grill marks appear and they are slightly softened.

Peach-Fennel Salad

    In a bowl, combine sliced peaches, sliced fennel bulb, and fresh mint leaves.

Caper Vinaigrette
