Method

Preparing the Polenta

    Boil the Water

    In a large pot, bring 6 cups of water to a rapid boil. Add 1 tsp of salt to the boiling water.

    Add Polenta

    Gradually whisk in 2 cups of polenta to the boiling water to prevent lumps from forming.

    Cook the Polenta

    Reduce the heat to low and cook the polenta for about 30-40 minutes, stirring frequently until thickened and creamy.

    Finish with Butter and Cheese

    Once the polenta is cooked, stir in 4 tablespoons of butter and 1 cup of grated Parmesan cheese until combined and creamy.

Preparing the Topping

    Sauté the Mushrooms

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add 2 cups of chopped mushrooms and sauté for about 5 minutes until they begin to soften.
