Method

Tenderloin Preparation

    Season the Tenderloin

    Rub the Roseda Farms tenderloin with salt and black pepper all over.

    Sear the Tenderloin

    In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the tenderloin and sear on all sides until browned (about 4-5 minutes).

    Roast the Tenderloin

    Transfer the skillet to a preheated oven at 400°F (200°C) and roast for about 20-25 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare.

    Rest the Tenderloin

    Remove from the oven and let rest for at least 10 minutes before slicing.

Confit Fingerling Potatoes

    Prepare the Potatoes

    In a saucepan, combine fingerling potatoes, garlic cloves, thyme, and olive oil. Ensure the potatoes are fully submerged in oil.

    Cook the Potatoes

    Simmer over low heat for about 45 minutes, or until the potatoes are fork-tender.

    Drain and Season

    Once cooked, drain the potatoes and season with salt to taste.

Charred Eggplant Puree

    Char the Eggplant

    Place the whole eggplant over an open flame or under a broiler until the skin is charred and the flesh is soft. Allow to cool.

    Prepare the Puree

    Once cooled, scoop the flesh into a food processor. Add tahini, lemon juice, garlic, salt, and olive oil. Blend until smooth.

Summer Vegetables

    Chop the Vegetables

    Slice zucchini, bell pepper, and yellow squash into bite-sized pieces.

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add the chopped vegetables, salt, and black pepper. Sauté until tender and slightly charred (about 8-10 minutes).

Smoked Tomato Butter

    Prepare the Butter

    In a small bowl, combine softened unsalted butter, smoked paprika, tomato paste, and salt. Mix until well combined.
