Preparation

    Char the Grapefruit

    Cut the grapefruit in half and use a grill or a skillet to char the cut side over medium-high heat for about 3-5 minutes until grill marks appear and the flesh is slightly caramelized.

    Juice the Grapefruit

    After charring, let the grapefruit halves cool slightly, then juice one half into a mixing glass. Set the other half aside for garnish.

Mixing the Drink

    Combine Ingredients

    In a cocktail shaker filled with ice, add the mezcal, agave syrup, lime juice, and the freshly squeezed grapefruit juice. Shake well until chilled.

    Prepare the Glass

    If desired, rim the edge of a highball glass with salt. Fill the glass with ice.

    Strain and Top

    Strain the mixture from the shaker into the prepared glass over the ice. Top with grapefruit soda.

Garnishing

    Add Garnish

    Garnish the drink with a wedge of the charred grapefruit and a lime wedge on the rim of the glass.
