    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.

    Cook the Mushrooms

    Add the sliced mushrooms to the skillet. Season with salt and black pepper. Cook for about 10 minutes until the mushrooms have released their moisture and are slightly browned. Stir in the chopped parsley and remove from heat.

    Combine with Cream Cheese

    In a large bowl, combine the sautéed mushroom mixture with the cream cheese, mixing until well blended. Allow to cool slightly while preparing the pastry.

Assembling the Strudel

    Preheat your oven to 200°C (400°F).

    On a lightly floured surface, roll out each puff pastry sheet to smooth out any creases. Cut each sheet in half if necessary.
