Method

Cooking the Risotto

    Prepare the Broth

    In a saucepan, heat the vegetable broth over low heat. Keep it warm throughout the cooking process.

    Roast the Mushrooms

    Preheat your oven to 400°F (200°C). Clean the mushrooms and slice them. Toss them in 1 tablespoon of olive oil, salt, and pepper. Spread them on a baking sheet and roast for 15-20 minutes until golden brown.

    Sauté Aromatics

    In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the chopped shallot and sauté until translucent, about 3 minutes. Add the minced garlic and cook for an additional 1 minute.

    Cook the Rice

    Add the Arborio rice to the skillet and stir to coat the grains with oil. Toast the rice for about 2 minutes until slightly translucent.

    Add the Wine

    Pour in the dry white wine and stir continuously until it is mostly absorbed by the rice.

    Add Broth Gradually

    Begin adding the warm vegetable broth one ladle at a time, stirring frequently. Allow the rice to absorb most of the liquid before adding another ladle. Continue this process for about 18-20 minutes until the rice is creamy and al dente.

    Finish the Risotto

    Once the rice is cooked, stir in the roasted mushrooms, butter, grated Parmesan cheese, and season with salt and pepper to taste. Remove from heat.

    Garnish

    Serve the risotto garnished with chopped fresh parsley.

Preparing the Lobster (Optional)

    Poach the Lobster

    If adding lobster, bring a small pot of water to a gentle simmer. Add the lobster tail and poach for about 5-7 minutes until cooked through. Remove from water and let cool slightly.

    Prepare Lobster Meat

    Once cool, carefully remove the lobster meat from the shell and slice it into bite-sized pieces. Toss with melted butter and lemon juice.

    Serve

    Top the risotto with the poached lobster pieces if desired.
