Prep the Olives
Rinse the mixed olives under cold water to remove any brine. Drain well and set aside.

Prepare the Marinade
In a mixing bowl, combine the olive oil, minced garlic, lemon zest, orange zest, chopped rosemary, chopped thyme, red pepper flakes, red wine vinegar, and honey. Mix well until all ingredients are blended.

Combine and Marinate
Add the rinsed olives to the marinade and stir gently to ensure all olives are well coated. Season with salt and black pepper to taste.

Refrigerate
Transfer the marinated olives to a clean jar or airtight container. Seal tightly and refrigerate for at least 2 hours, or overnight for better flavor.

Serve
Remove the marinated olives from the refrigerator about 30 minutes before serving to allow them to reach room temperature. Serve in a bowl with toothpicks as an appetizer or side dish.
