    Prepare the Berries

    Wash the fresh mixed berries thoroughly under cold water. Remove any stems or leaves from the strawberries and slice them in half. Place all berries in a large mixing bowl.

    Add the granulated sugar and lemon juice to the berries. Gently mash the mixture with a fork or potato masher to release the juices while still leaving some berries whole. Let the mixture sit for about 15 minutes to allow the sugar to dissolve and the berries to macerate.

    In a large pot, bring the water to a boil. Once boiling, remove from heat and let it cool for about 10 minutes. Once cooled, pour the water over the berry mixture in the bowl, stirring gently to combine.

    Sprinkle the yeast over the mixture and stir gently to incorporate. Let the mixture sit for 5 minutes to allow the yeast to activate, then stir again gently.

    Transfer the mixture into a sanitized fermentation vessel. Seal with an airlock and place it in a cool, dark area. Allow it to ferment for about 1-2 weeks, checking periodically for bubbling activity.

    After fermentation is complete, add the honey and vanilla extract to the mixture, stirring gently to combine. This will add sweetness and flavor.
