Method

Preparation of Herbal Infusion

  1. 1

    Infuse the Herbs

In a large glass jar, combine the Génépy herb and dried mint leaves with the high-proof alcohol. Seal the jar tightly and let the mixture steep in a cool, dark place for about 2 weeks. Shake the jar gently every few days to help the herbs infuse.

Making the Syrup

  1. 2

    Prepare the Sugar Syrup

In a small saucepan, combine the sugar and water. Bring to a gentle simmer over medium heat, stirring until the sugar is fully dissolved. Remove from heat and let it cool completely.

Final Assembly

  1. 3

    Combine the Infusion and Syrup

After 2 weeks of infusing, strain the herbal mixture through a fine mesh strainer or cheesecloth into a clean bottle. Add the cooled sugar syrup to the strained infusion and stir well to combine.

  2. 4

    Bottle and Store

Transfer the Génépy mixture into a clean glass bottle with a tight-sealing cap. Seal the bottle and store it in a cool, dark place. Let it sit for at least another week before using to enhance the flavors.
