Focaccia Dough

Focaccia Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water (about 110°F/43°C) with sugar and active dry yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.

    Make Dough

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture along with olive oil. Mix until a sticky dough forms.

    Knead Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. If using, knead in fresh rosemary during this process.

    First Rise

    Place the dough in a greased bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.

    Prepare for Baking

    Once the dough has risen, punch it down and spread it out on a greased baking sheet or a large oven-safe dish. Use your fingers to create dimples in the surface of the dough.

    Season Dough

    Drizzle olive oil over the top of the dough, sprinkle with coarse sea salt, and let it rise for another 20-30 minutes before baking.

Marinara Sauce Preparation

    Cook Garlic

    In a saucepan over medium heat, heat olive oil and add minced garlic. Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.

    Add Tomatoes and Seasonings

    Add the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and red pepper flakes (if using) to the saucepan. Stir well to combine.

    Simmer Sauce

    Bring the sauce to a simmer, reduce the heat to low, and let it cook for 15-20 minutes, stirring occasionally, to allow the flavors to meld.

Baking the Focaccia

    Preheat Oven

    Preheat your oven to 425°F (220°C).

    Bake Focaccia

    Once the dough has risen and the oven is preheated, bake the focaccia for 20-25 minutes or until golden brown. The internal temperature should reach about 200°F (93°C).

    Remove the focaccia from the oven, let it cool slightly, and cut into squares. Serve warm with marinara sauce on the side for dipping.
