Cake Preparation

Preheat the Oven
Preheat your oven to 375°F (190°C). Prepare an 8-inch round cake pan by greasing it and lining the bottom with parchment paper.

Melt Chocolate and Butter
In a medium saucepan over low heat, combine the semi-sweet chocolate and unsalted butter. Stir continuously until both are melted and smooth. Remove from heat and let it cool slightly.

Mix Sugar and Eggs
In a large mixing bowl, whisk together the granulated sugar and eggs until the mixture is thick and pale in color. This should take about 3-5 minutes.

Combine Mixtures
Gradually pour the melted chocolate mixture into the egg mixture, stirring constantly to combine. Add vanilla extract and mix well.

Add Dry Ingredients
Sift the unsweetened cocoa powder and salt over the chocolate mixture. Gently fold in until just combined.

Bake the Cake
Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until the cake has set and a toothpick inserted into the center comes out with a few moist crumbs.

Cool the Cake
Allow the cake to cool in the pan for 10 minutes, then carefully invert onto a wire rack to cool completely.
Macerating Berries

Prepare the Berries
In a medium bowl, combine the mixed summer berries, granulated sugar, and lemon juice. Toss gently to coat the berries evenly.

Macerate
Cover the bowl with plastic wrap and let the mixture sit at room temperature for about 30 minutes to allow the flavors to meld and the berries to release their juices.
Serving the Cake

Plate the Cake
Once the cake has cooled, slice it into wedges and place each slice on a serving plate.

Add Berries and Sorbet
Spoon the macerated berries over each slice of cake. Add a scoop of raspberry sorbet on the side of each plate.

Garnish with Cocoa Nibs
Sprinkle cocoa nibs over the top of the cake and berries for added texture and flavor.
