    Prepare the Tomatoes

    Chop the heirloom tomatoes into bite-sized pieces and set aside.

    Prepare the Braised Peppers

    If using pre-braised peppers, ensure they are sliced. If braising from scratch, sauté sliced peppers in a pan with a bit of olive oil until soft.

Cooking

    Sauté the Base

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

    Add Tomatoes and Peppers

    Add the chopped heirloom tomatoes and braised peppers to the skillet. Season with salt, black pepper, and red pepper flakes. Cook for about 5-7 minutes, stirring occasionally, until the tomatoes start breaking down and creating a sauce.

    Cook the Eggs

    Create two small wells in the tomato-pepper mixture and crack an egg into each well. Cover the skillet and cook for about 4-5 minutes, or until the egg whites are set but the yolks remain runny.

    Toast the Focaccia

    While the eggs are cooking, toast the focaccia slices in a toaster or on a grill until golden brown.
