Mix the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center and crack the eggs into the well. Gradually mix the flour into the eggs using a fork until the dough starts to come together.

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap it in plastic wrap and let it rest for at least 30 minutes.

In a mixing bowl, combine the ricotta cheese, grated Parmesan cheese, chopped spinach, nutmeg, salt, and black pepper. Mix until well combined and set aside.

Roll and Cut the Dough
After resting, divide the dough into 4 pieces. Roll out one piece at a time on a floured surface until very thin (about 1/16 inch). Cut into 2-inch squares.

Fill the Capelletti
Place about 1 teaspoon of filling in the center of each square. Fold the square diagonally to form a triangle and press to seal the edges. Bring the two pointed ends together to form a small hat shape (capelletti).

Bring a large pot of salted water to a boil. Carefully add the capelletti and cook for about 4-5 minutes or until they float to the surface. Remove with a slotted spoon and drain.
