Biscuit Preparation

    Mix Dry Ingredients

    In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

    Incorporate Butter

    Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.

    Add Buttermilk

    Make a well in the center of the mixture and pour in the cold buttermilk. Stir gently until just combined. Do not overmix.

    Shape the Dough

    Turn the dough out onto a floured surface and gently pat it into a rectangle about 1-inch thick. Fold the dough over onto itself a few times to create layers.

    Cut Biscuits

    Using a biscuit cutter, cut out biscuits and place them on a baking sheet lined with parchment paper. Gather any scraps and repeat until all dough is used.

    Bake

    Preheat the oven to 425°F (220°C) and bake the biscuits for 12-15 minutes or until golden brown.

    Prepare Chicken

    Season the boneless chicken thighs with salt, black pepper, and paprika. Let them marinate for at least 15 minutes.

    Set Up Dredging Station

    In one bowl, place the all-purpose flour. In another bowl, whisk together the eggs and milk.

    Dredge Chicken

    Dip each chicken thigh first into the flour, then into the egg mixture, and finally back into the flour to coat evenly.

    Fry Chicken

    Heat oil in a deep skillet over medium-high heat. Once hot, carefully add the chicken pieces and fry until golden brown and cooked through, about 6-8 minutes per side.

    Remove the chicken from the oil and place on a paper towel-lined plate to drain excess oil.

    Split the baked biscuits in half. Place a piece of fried chicken on the bottom half, add pickles and a drizzle of hot sauce if desired, and top with the other half of the biscuit.
