    Toast English Muffins

    Split the English muffins in half and toast them until golden brown.

    Prepare Avocado

    Slice the avocado in half, remove the pit, scoop out the flesh, and slice it into thin pieces.

Poaching Eggs

    Boil Water

    In a large saucepan, bring water to a gentle simmer and add white vinegar.

    Poach Eggs

    Crack each egg into a small bowl, then gently slide it into the simmering water. Poach for about 3-4 minutes until the whites are set but the yolks remain runny.

    Remove Eggs

    Using a slotted spoon, carefully remove the poached eggs and place them on a plate lined with paper towels to drain.

Hollandaise Sauce

    Melt Butter

    In a small saucepan, melt the unsalted butter over low heat until completely melted.

    Whisk Egg Yolks

    In a bowl, whisk together the egg yolks and fresh lemon juice.

    While whisking continuously, slowly drizzle in the melted butter until the sauce thickens. Season with salt and cayenne pepper.

    On each toasted English muffin half, layer slices of avocado, followed by a poached egg. Drizzle hollandaise sauce generously over the top.
