    Prepare the Filling

    In a large bowl, combine the shredded duck meat, ground pork, chopped napa cabbage, grated carrot, and chopped scallions. Add the black vinegar, soy sauce, salt, and pepper. Mix well until all ingredients are evenly incorporated.

    Assemble the Egg Rolls

    Lay an egg roll wrapper on a clean surface with a corner facing you. Place about 2 tablespoons of the filling in the center. Fold the corner closest to you over the filling, then fold in the sides and roll tightly away from you. Seal the top edge with a little water.

    Cook the Egg Rolls

    Heat oil in a deep skillet or fryer to 350°F (175°C). Fry the egg rolls in batches, turning occasionally, until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

    Serve

    Serve the hot duck egg rolls with additional black vinegar and soy sauce for dipping.
