    Marinate the Chicken

    In a bowl, combine the chicken thighs with buttermilk. Cover and refrigerate for at least 2 hours or overnight for best results.

    Prepare the Breading

    In a separate bowl, mix the flour, cornstarch, salt, black pepper, garlic powder, and onion powder.

    Heat the Oil

    In a large pot or deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chicken

    Remove the chicken from the buttermilk, allowing excess to drip off, and dredge in the flour mixture. Fry the chicken in batches for about 6-8 minutes or until golden brown and cooked through. Drain on paper towels.

    Make the Sambal Mayo

    In a small bowl, mix together the mayonnaise and sambal oelek.

    Assemble the Banh Mi

    Slice the French rolls in half. Spread hoisin sauce on the bottom half, add a piece of fried chicken, top with pickled vegetables, sambal mayo, sliced fresno pepper, cilantro, and scallions. Close the sandwich and serve.
