    Make Roasted Garlic Aioli

    Preheat the oven to 400°F (200°C). Wrap garlic cloves in foil and roast for about 20 minutes until soft. Allow to cool, then squeeze out the garlic and blend with mayonnaise, lemon juice, olive oil, and salt until smooth.

    Prepare Home Fries

    Dice the potatoes into small cubes. Boil in salted water for 5 minutes, then drain. Heat a skillet with oil, add the potatoes, and cook until golden brown and crispy, about 10-15 minutes.

    Cook Sunny Side Up Eggs

    In another skillet, heat a little oil over medium heat. Crack the eggs into the skillet and cook until the whites are set, but the yolks remain runny, about 3-4 minutes.

    Combine and Serve

    In a serving bowl, layer the home fries, topped with both types of kimchi. Place the sunny side up egg on top and drizzle with roasted garlic aioli. Sprinkle with furikake and garnish with chopped scallions.
