Prepare the Tofu
Press the tofu to remove excess moisture, then cut it into thick slices.

Fry the Tofu
Heat vegetable oil in a skillet over medium-high heat. Fry the tofu slices until golden brown and crispy on both sides, about 3-4 minutes per side. Remove and drain on paper towels.

Make the Sambal Mayo
In a bowl, mix the mayonnaise with sambal oelek. Set aside.

Prepare the Rolls
Slice the French rolls lengthwise, but do not cut all the way through. Spread hoisin sauce on one side of each roll.

Build the Banh Mi
Layer the fried tofu on the hoisin-smeared side of the roll. Top with pickled vegetables, sambal mayo, sliced scallions, and fresh cilantro.

Serve
Close the rolls and serve immediately with extra sambal mayo on the side, if desired.
