    Prepare the Fries

    Cook the frozen house fries according to package instructions until crispy and golden brown. Keep warm.

    Make the Sausage Gravy

    In a skillet over medium heat, cook the breakfast sausage until browned. Add the flour and stir to combine, cooking for 1-2 minutes. Gradually whisk in the milk, and bring the mixture to a simmer. Cook until thickened, about 5-7 minutes. Season with salt and black pepper.

    Fry the Eggs

    In a separate skillet, fry the eggs sunny-side up in a little oil or butter until the whites are set but the yolks remain runny.

    Assemble the Poutine

    On a plate, layer the crispy fries, then pour the sausage gravy over the top. Scatter the white cheddar curds over the gravy, followed by the sunny-side up eggs. Garnish with Espelette chili pepper and sliced scallions.
