    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Season the Michigan craft beef with salt and black pepper, then sear it in the skillet until browned on all sides. Remove from skillet and set aside.

    Return the seared beef to the skillet, mixing it with the potatoes and mushrooms. Cook for an additional 5 minutes to heat through.

    In a separate non-stick pan, heat the remaining olive oil over medium heat. Fry the eggs sunny-side up until the whites are set but the yolks are still runny.
