Make the Biscuits
Preheat the oven to 425°F (220°C). In a large bowl, whisk together flour, baking powder, baking soda, and salt. Cut in butter until the mixture resembles coarse crumbs. Stir in buttermilk until just combined. Turn the dough onto a floured surface and gently knead a few times. Pat into a 1-inch thick round and cut out biscuits.

Bake the Biscuits
Place biscuits on a baking sheet and bake for 12-15 minutes or until golden brown. Remove from oven and let cool slightly.

Make the Gravy
In a large skillet over medium heat, cook the sausage until browned. Stir in 0.5 cups of flour and cook for a minute. Gradually whisk in milk, stirring constantly until the mixture thickens. Season with black pepper and herbs.

Serve
Split the biscuits in half, ladle the sausage gravy over the top, and add a sunny-side up egg on each biscuit. Serve immediately.
