Method

Scone Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 400°F (200°C).

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Whisk together until evenly mixed.

  3. 3

    Cut in Butter

Cut the stick of unsalted butter into small cubes and add it to the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

  4. 4

    Combine Wet Ingredients

In a separate bowl, whisk together the heavy cream, egg, and vanilla extract until well combined.

  5. 5

    Form the Dough

Pour the wet mixture into the dry ingredients and stir gently until just combined. Fold in the seasonal fruit until evenly distributed.

  6. 6

    Shape the Scones

Turn the dough out onto a lightly floured surface and pat it into a circle about 1 inch thick. Cut the dough into wedges or use a round cutter to cut out scones.

  7. 7

    Bake the Scones

Place the scones on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes or until golden brown.

Honey Butter Preparation

  1. 8

    Make Honey Butter

In a bowl, soften the stick of unsalted butter until creamy. Add the Whitney-Hive Honey and mix until well combined and smooth.

  2. 9

    Serve

Once the scones are baked, let them cool slightly, then serve warm with the honey butter on the side.
