Fried Halibut Sandwich

    Prepare the Halibut

    Rinse the halibut fillets under cold water and pat them dry with paper towels.

    Set Up Breading Stations

    In three separate shallow bowls, place the all-purpose flour in the first bowl, whisk the eggs in the second bowl, and add the panko breadcrumbs, salt, black pepper, and cayenne pepper in the third bowl.

    Bread the Halibut

    Coat each halibut fillet first in the flour, shaking off the excess. Next, dip it into the beaten eggs, letting any excess drip off. Finally, coat it well with the panko mixture, pressing it gently to adhere.

    Heat the Oil

    In a large skillet or frying pan, heat the vegetable oil over medium-high heat until it shimmers but is not smoking.

    Fry the Halibut

    Carefully add the breaded halibut fillets to the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove the fillets and place them on a plate lined with paper towels to drain excess oil.

    Prepare the Vegetables

    Thinly slice the onion and wash the lettuce leaves.

    Assemble the Sandwich

    On each burger bun, spread a generous amount of remoulade sauce, add a lettuce leaf, place the fried halibut fillet on top, and finish with onion slices. Top with the other half of the bun.

    Serve

    Serve the sandwiches immediately with extra remoulade on the side if desired.
