Prepare the Brussels Sprouts
Preheat your oven to 400°F (200°C). Rinse the Brussels sprouts under cold water and trim the ends. Cut the larger sprouts in half to ensure even cooking.

Cook the Bacon
In a large skillet over medium heat, cook the smoked bacon until crispy, about 6-8 minutes. Remove the bacon from the skillet and drain on paper towels. Once cooled, crumble the bacon into small pieces.

Toss with Olive Oil and Seasoning
In a large bowl, toss the trimmed Brussels sprouts with olive oil, salt, and black pepper until evenly coated.

Roast the Brussels Sprouts
Spread the Brussels sprouts in a single layer on a baking sheet. Roast in the preheated oven for about 20-25 minutes, or until they are golden brown and crispy, tossing halfway through.

Make the Creamy Parmesan Sauce
In a medium saucepan over medium heat, combine heavy cream and half of the Parmesan cheese. Stir until the cheese is melted and the sauce is creamy. Add sherry vinegar and season with salt and pepper to taste.

Combine and Serve
Once the Brussels sprouts are done, remove them from the oven and drizzle with the creamy Parmesan sauce. Sprinkle the crumbled bacon and remaining Parmesan cheese on top. Serve immediately.
