Preparation and Assembly

Prepare the Chicken
Heat olive oil in the skillet or brush it on the grill. Place the chicken breasts onto the hot surface and cook for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest.

Make the Bleu Cheese Sauce
In a mixing bowl, combine bleu cheese, sour cream, and mayonnaise. Use a fork to mash the mixture together until well blended but still slightly chunky. Adjust seasoning with salt and pepper to taste.

Prepare the Vegetables
Wash the lettuce and tear it into bite-sized pieces. Slice the tomato into thick rounds.

Assemble the Sandwich
Slice the sandwich rolls in half. Spread a generous amount of bleu cheese sauce on the bottom half of each roll. Add a layer of lettuce, followed by the cooked chicken breast. Top with tomato slices. Finish with more bleu cheese sauce if desired, and place the top half of the roll on.

Fry or bake the house cut fries according to your preference. Serve the assembled sandwich with a side of fries.
