Sanitize and prepare juice
Sanitize all equipment that will contact the juice (fermenter, siphon, hydrometer, spoons). Combine 4 gallons fresh apple juice, 1 gallon white grape juice and 0.5 gallon cranberry juice in the sanitized primary fermenter. If using berry concentrate, add 8 oz now for deeper color and flavor. Stir gently to mix.
Stabilize and treat must
If the juice has preservatives or you want to kill wild microbes, sprinkle 1 tsp crushed Campden (sodium metabisulfite) into the must and stir. Wait 24 hours before adding yeast to allow SO2 to dissipate. After 24 hours, add 1 tsp pectic enzyme to help break down pectin and improve clarity and juice integration. Stir gently.
Adjust gravity and acidity
Measure the starting specific gravity with a hydrometer. If you need higher alcohol, dissolve 2 lb corn sugar in a cup of warm (not hot) water and add to the must; stir to dissolve and evenly distribute. Add 1 tsp acid blend and, if desired, 0.5 tsp malic acid to brighten apple character. Mix thoroughly and check gravity and pH (target pH 3.3–3.8). Adjust if necessary.
Pitching and Primary Fermentation
Rehydrate and pitch yeast
Rehydrate the champagne/cider yeast per manufacturer instructions (usually rehydrate in 10x mass of sterile water at ~35–40°C for 15 minutes). Add 1 tsp yeast nutrient to the must. Once rehydrated and the must temperature is within 10°F (~5°C) of the yeast starter, pitch the yeast into the fermenter and mix gently to aerate (do not over-aerate).
Ferment
Close the fermenter and fit an airlock. Ferment at 60–68°F (15–20°C) for 7–14 days for primary fermentation activity, depending on yeast and temperature. Active fermentation will produce visible CO2 and krausen/foam. After the most active fermentation subsides (specific gravity has dropped significantly), rack (siphon) the cider off the gross lees into a sanitized secondary fermenter to promote clarity.
Secondary Fermentation & Clarification
Secondary aging
Allow cider to settle in secondary for 2–4 weeks at 55–60°F (13–16°C) until fermentation is complete and the cider begins to clear. Take hydrometer readings on two consecutive days; when the gravity is stable (likely around 1.000–1.005 depending on sweetness), proceed.
Fine and cold crash
Optionally add fining agents (e.g., bentonite or gelatin) per product directions to accelerate clearing. Cold crash the cider at 35–40°F (2–4°C) for 48–72 hours to precipitate proteins and yeast for improved clarity.
Kegging and Carbonation (Draught Serving)
Prepare for kegging
Sanitize kegs, lines and fittings. Transfer the clear cider gently into the keg, leaving behind sediment. If you want a lightly sweet or semi-sweet cider, blend back a measured volume of unfermented juice or use a stabilizer and backsweeten; note this requires sorbate and metabisulfite to prevent re-fermentation. For this recipe we will naturally carbonate.
Force carbonate or natural keg conditioning
Option A (force carbonate): Chill keg to 38°F (3°C), seal and apply CO2 at 12–15 psi for 24–48 hours, then set serving pressure to 10–12 psi at 38°F (this yields ~2.4–2.8 volumes; adjust to preference). Option B (natural conditioning in keg): Add 4 oz priming sugar (dissolved in 8 oz boiling water and cooled) to the keg before filling to achieve modest carbonation (~1.8–2.2 vols). Seal and allow to condition at 60–65°F for 5–10 days, then chill and adjust serving pressure. Check carbonation level and chill before serving.
Serve
Serve cold on draught through a clean tap at ~38–45°F. Aim for moderate carbonation and a balanced presentation of apple, grape body, and bright cranberry notes. Monitor keg and consume within recommended timeframe (4–8 weeks) for best freshness.
Notes & Troubleshooting
If fermentation stalls, check temperature, add a nutrient/energizer dose (0.5 tsp energizer), and gently re-suspend yeast. If haze persists after cold crashing and fining, allow additional aging. Adjust sweetness by backsweetening only after stabilizing with sorbate and Campden. Always sanitize thoroughly; oxygen exposure after fermentation will accelerate oxidation—minimize splashing when transferring.
