Preparation
Prep bread and cheese
Remove cheese from the refrigerator so it comes closer to room temperature (about 10 minutes) for better melting. If using block cheese, slice or shred to total about 12 ounces. Lay out 8 slices of bread on a clean work surface.
Mix seasonings
In a small bowl combine the salt and black pepper. If using Dijon mustard, stir it into the mayonnaise until smooth.
Assembling sandwiches
Spread butter evenly on one side of each bread slice (this will be the outside that contacts the pan). If you prefer mayo on the outside for extra browning, substitute mayonnaise for butter on the outside. On the unbuttered side of 4 bread slices, spread about 1/2 tbsp mayo-mustard mixture or plain mayo if using.
Distribute the cheese evenly on the 4 prepared slices: about 2 oz cheddar per sandwich (adjust to preference). If using Swiss/Gruyère, place a layer of that cheese on top of the cheddar. Add optional fillings (tomato slices, bacon, caramelized onions) now. Top each with the remaining bread slice, buttered side facing out.
Cooking
Heat the pan
Place a large nonstick or cast-iron skillet over medium-low to medium heat. Let it warm for 1–2 minutes so the surface is evenly heated but not smoking.
Cook sandwiches
Place 2 sandwiches in the pan, buttered side down. Cook undisturbed for 3–4 minutes, checking after 3 minutes. When the bottom is golden brown and crisp, carefully flip each sandwich using a spatula. Press gently with the spatula to improve contact between bread and cheese and encourage melting. Cook the second side another 2–3 minutes until golden and the cheese is melted.
Manage heat for even melting
If the bread is browning too quickly before the cheese melts, reduce heat to low and cover the pan with a lid for 1–2 minutes to trap heat and help cheese melt without burning the bread. Remove lid and finish until crisp.
Repeat with remaining sandwiches. If making multiple batches, keep finished sandwiches on a baking sheet in a 200°F (95°C) oven to keep warm and crisp while you cook the rest.
Finishing
Let sandwiches rest for 1 minute on a cutting board, then slice diagonally if desired. Serve immediately.
