Shuck and prepare oysters

Carefully shuck 6 fresh oysters, keeping each oyster liquor (the natural juice) in the shell. Rinse any large bits of shell from the top of the oyster but preserve as much liquor as possible. Place the oysters on a plate or on a bed of crushed ice to keep cold.

Season oysters

Sprinkle a tiny pinch of fine sea salt over each oyster and a light pinch of cracked black pepper. This helps balance the flavors and accentuates the bourbon.

Combine bourbon and lemon

In a small glass or mixing vessel, combine 3 tablespoons bourbon with 2 teaspoons fresh lemon juice. Stir gently for 5–10 seconds β€” do not dilute with water. Taste and adjust: if you prefer a brighter citrus note, add up to 1/2 teaspoon more lemon juice.

Dress oysters

Using a small bar spoon, carefully spoon about 1/2 tablespoon of the bourbon-lemon mixture over each oyster, distributing evenly (you should use roughly all of the mixture across 6 oysters). The bourbon will mingle with the oyster liquor and lemon to create the signature Kentucky profile.

Serve immediately

Arrange oysters on a chilled platter or on the crushed ice/rock salt bed to keep them stable. Garnish each oyster with a small sprinkle of microgreens or a few snips of chive if using. Serve with lemon wedges on the side for additional brightness.

Optional: Cocktail pairing (served alongside)

If you prefer, serve a small sip of neat bourbon (about 1 oz) in a shot or tasting glass alongside the oysters to complement and amplify the bourbon notes. Alternatively, serve with a very small iced whiskey cocktail (stirred, not shaken) for guests who want more bourbon flavor.
