Cocktail
Method
Cocktail
Prepare glass (optional)
If you want a seasoned rim, rub a lime wedge around the edge of a highball or rocks glass and dip the rim into coarse salt or Tajín to coat lightly. Set the glass aside.
Add juices and tequila
To the shaker with muddled jalapeño and agave, add the fresh lime juice, fresh ruby grapefruit juice, and blanco tequila.
Shake with ice
Fill the shaker with ice (about 3/4 full). Secure the lid and shake vigorously for 10–12 seconds until well chilled and slightly diluted.
Strain
Double-strain (using a Hawthorne strainer and a fine mesh sieve) into the prepared glass over fresh ice. Double-straining removes jalapeño solids and seeds for a smoother sip.
Top with ginger beer
Carefully top the cocktail with 3 oz chilled ginger beer. Stir once gently with a bar spoon to integrate without flattening the carbonation.
Garnish and serve
Garnish with a lime wheel and/or a thin jalapeño slice on the rim or floated on top. Serve immediately so the ginger beer remains fizzy.
Adjustments and notes
Taste and adjust heat or sweetness: add another 1/4 oz agave for more sweetness or muddle an extra jalapeño slice for more heat. Use reposado tequila for a richer, oakier variant; reduce grapefruit to 3/4 oz if you prefer a tarter lime-forward profile.
