Prepare Oysters

Shuck

Using a clean oyster knife, carefully shuck 3 fresh oysters over a small bowl or shot glass so you capture the oyster liquor (the briny juice). Set the oysters in their half shells on a bed of crushed ice or a towel to stabilize.

Reserve 1/2 to 3/4 ounce (about 1–2 tablespoons) of the oyster liquor in the small bowl. You will incorporate this into the cocktail for salinity and oyster character.

Mix Cocktail

Add the blanco tequila (3 oz), fresh lime juice (1 oz), agave syrup (1/2 tbs), reserved oyster liquor (about 1/2–3/4 oz), and the optional celery bitters or saline (2 dashes) into the cocktail shaker.

Add fine salt (1/4 tsp) and a pinch of cracked black pepper to the shaker to enhance briny flavors.

Fill the shaker with ice (about 1 cup) and secure the lid. Shake vigorously for 10–15 seconds until the outside of the shaker is cold and slightly frosted. This chills and slightly dilutes the drink while emulsifying the oyster liquor into the cocktail.

If you prefer a clearer pour, double-strain the cocktail through the shaker strainer and a fine mesh strainer into a chilled rocks glass over fresh ice or into a chilled coupe (no ice), depending on presentation preference.

Finish & Serve

Taste and adjust: if the drink feels too tart, add a small splash (1/4 tsp) of agave syrup and stir lightly; if it needs more salinity, add a few drops of oyster liquor or a tiny pinch of salt.

Place the three oysters on a small chilled plate or on top of the glass rim if desired. Garnish the cocktail with a lime wheel or wedge and a sprinkling of micro cilantro or chopped chive (about 1 tsp) over the oysters or the drink.

Serve immediately: present the cocktail alongside the oysters so the drink and oysters can be enjoyed together — sip the cocktail between bites of oyster to experience the interplay of tequila, lime, and brine.
