Prepare the Bread Pudding Base
Preheat your oven to 180°C (350°F). In a large mixing bowl, tear the stale bread into small pieces and set aside.
Heat the Milk and Cream
In a saucepan, combine the milk and heavy cream. Heat over medium heat until just simmering, then remove from heat.
Add Pistachios and Chocolates
Gently fold in the chopped pistachios, dark chocolate, and white chocolate into the soaked bread mixture.
Incorporate Vanilla
Add the scraped vanilla bean into the mixture and stir until evenly distributed.
Bake the Budino
Transfer the mixture into a greased baking dish. Bake in the preheated oven for 30-35 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
Cool and Serve
Remove from the oven and let it cool for at least 15 minutes before serving. This dish can be served warm or chilled, ideally with a scoop of vanilla bean gelato on top.
