Crispy Cauliflower

Prep and blanch
Cut cauliflower into bite-size florets. Bring a medium pot of salted water to a boil. Blanch florets for 2 minutes to remove rawness and tighten texture, then drain and immediately plunge into an ice bath to stop cooking. Drain thoroughly and pat dry with paper towels—removing surface moisture is critical for crispiness.

Make batter
In a large bowl whisk together the flour, cornstarch, baking powder, kosher salt, and black pepper. In a separate small bowl whisk the egg with cold sparkling water. Pour the wet into the dry and whisk until just combined; the batter should be slightly thick but still fluid—adjust with a tablespoon of water if too thick.

Heat oil
Pour neutral oil into a heavy-bottomed pot or deep skillet to a depth of about 2 inches. Heat the oil to 350°F (175°C). If you don't have a thermometer, test with a drop of batter— it should sizzle and float immediately.

Fry in batches
Working in small batches (do not overcrowd), dredge blanched, dried cauliflower in the batter, letting excess drip off, then carefully lower into hot oil. Fry until golden and crisp, about 3–4 minutes per batch, turning once. Use a slotted spoon to transfer to a wire rack set over a baking sheet or to paper towels to drain. Keep finished batches warm in a 200°F (95°C) oven if desired while you finish frying.

Season
When all cauliflower is fried, sprinkle lightly with sea salt flakes or additional kosher salt to taste while still warm.
Chipotle Aioli

While cauliflower blanches or fries, whisk together mayonnaise, sour cream, minced chipotle, adobo sauce, lime juice, minced garlic, smoked paprika, salt, and black pepper in a small bowl until smooth and homogenous. Taste and adjust heat or acidity—add more chipotle or adobo for heat, or another 1/2 tsp lime juice for brightness. Chill until ready to serve.

Assemble: arrange the fried cauliflower on a serving platter. Drizzle or dollop the chipotle aioli over the cauliflower (or serve aioli on the side for dipping). Scatter crumbled feta and crispy fried onions over the top, then sprinkle chopped cilantro. Serve immediately with lime wedges on the side for squeezing over the cauliflower.

Leftover / make-ahead notes: aioli can be made up to 2 days ahead and kept refrigerated in an airtight container. Fried cauliflower is best served immediately; re-crisp in a 400°F (200°C) oven for 6–8 minutes if reheating.
