    Prepare peppers

    Wash jalapeños and dry thoroughly. Slice each pepper lengthwise in half. Using a small spoon or a paring knife, remove seeds and membranes to reduce heat; leave some if you prefer spicier poppers. Pat the hollowed halves dry with paper towels.

    Make cheese filling

    In a medium bowl, combine softened cream cheese, grated sharp cheddar, and goat cheese (if using). Mix with a fork or electric hand mixer until smooth. Add garlic powder, onion powder, smoked paprika, chopped cilantro, salt, black pepper, and lime zest (if using). Taste and adjust seasoning. The mixture should be thick enough to pipe or spoon.

    Fill peppers

    Spoon or pipe the cheese filling into each jalapeño half, filling to just below the rim. Smooth the top so filling is even; avoid overfilling which makes coating difficult.

    Prepare dredging stations

    Place the all-purpose flour in a shallow bowl. In a second shallow bowl, whisk the eggs with milk until combined. In a third bowl, combine panko breadcrumbs, grated Parmesan, cayenne (if using), and 1/2 tsp salt; stir to combine.

    Coat poppers

    Working in batches, gently dredge each filled jalapeño in flour, shaking off excess. Dip into the egg wash, letting excess drip off, then press into the panko mixture to coat evenly. For a thicker crust, repeat the egg and panko step once more. Place coated poppers on a wire rack set over a sheet pan while you heat the oil.

    Heat oil

    In a deep heavy skillet or Dutch oven, pour enough oil to reach about 1 to 1.5 inches up the side (approximately 1.5 to 2 cups). Heat over medium-high heat until oil reaches 350°F (175°C) on a deep-fry thermometer. If you don't have a thermometer, test by dropping a small piece of bread — it should brown in about 45–60 seconds.

    Fry poppers

    Carefully add coated jalapeños in a single layer, not overcrowding the pan (work in batches). Fry for 2.5–3.5 minutes per side, turning once, until golden brown and crisp and the filling is hot. Use a slotted spoon to transfer cooked poppers to a wire rack or paper towel-lined plate to drain. Let rest 3–4 minutes before serving; the filling will be very hot.

    Alternative: Oven-bake

    Preheat oven to 425°F (220°C). Place coated poppers on a parchment-lined baking sheet. Spray tops lightly with cooking spray. Bake 15–20 minutes until golden and filling is set, rotating the pan halfway through. Baking time may vary based on oven and thickness of poppers.
