    Chill glass

    Place a rocks glass or coupe in the freezer for a few minutes, or fill it with ice water while you prepare the cocktail to chill it.

    Combine ingredients

    Add the aged rum, cognac, fresh lime juice, fresh grapefruit juice, falernum, allspice dram, simple syrup, and Angostura bitters into a cocktail shaker.

    Add ice and shake

    Fill the shaker with regular ice (about 1 cup). Secure the lid and shake vigorously for 12–18 seconds, until the outside of the shaker becomes frosty and well chilled.

    Prepare serving glass

    If you chilled the glass with ice water, dump it out. Fill the chilled rocks glass or coupe with crushed ice (about 1 cup) to create a cold bed for the cocktail.

    Double-strain over crushed ice

    Strain the shaken cocktail through a fine mesh strainer (and the shaker’s strainer if available) over the crushed ice. This removes small ice shards and any pulp for a clean, silky texture.

    Garnish and finish

    Express the oils of the grapefruit twist over the drink by holding the peel skin-side down above the cocktail and giving it a quick twist, then drop it in or rest a grapefruit wheel on the rim. Add a mint sprig for aroma if desired. Serve immediately.

    Provide a short straw or small cocktail spoon for sipping through the crushed ice. Sip slowly to enjoy the layered spice, citrus, and oak flavors.
