Cocktail

Method

Prep & Rim

  1. 1

    prepare glass

Choose a chilled coupe or rocks glass. Run the lime wedge around the rim of the glass to moisten it. Pour the coarse salt onto a small plate and gently roll the moistened rim through the salt to coat about half to three-quarters of the rim. Set the glass aside.

Mixing

  1. 2

    combine ingredients

In a cocktail shaker, add the blanco tequila (2 oz), fresh lime juice (0.75 oz), Campari (0.5 oz), grapefruit liqueur (0.5 oz), and simple syrup (0.25 oz) if you prefer a touch of sweetness. Add 6 ice cubes.

  2. 3

    shake

Secure the shaker and shake vigorously for 12–15 seconds until the outside of the shaker is well-chilled and slightly frosted. This dilutes and chills the drink to proper balance.

  3. 4

    double strain & serve

Double strain the cocktail into the prepared glass (use a Hawthorne strainer and a fine mesh strainer) to remove ice shards and any pulp. If you prefer the drink on the rocks, strain over fresh large ice in a salt-rimmed rocks glass instead.

Garnish

  1. 5

Express the oils of a grapefruit twist over the surface of the cocktail by holding the twist skin-side down and giving it a quick pinch, then drop the twist into the drink or rest a thin wheel on the rim. Serve immediately.
