Prepare Ingredients

    Make ginger syrup (if not using store-bought)

    Combine equal parts granulated sugar and water (1/2 cup sugar + 1/2 cup water) in a small saucepan with a 2-inch piece of peeled fresh ginger, sliced. Bring to a gentle simmer, stirring until sugar dissolves. Simmer 5 minutes to infuse, then remove from heat and cool. Strain and refrigerate. Yields ~1 cup; use 0.5 oz per cocktail.

    Juice a ripe pear to yield 1 ounce fresh pear juice per cocktail. If you don't have a juicer, finely chop pear and press through a fine mesh sieve to extract juice.

    Thinly slice a fresh jalapeño and set aside 2 slices per cocktail. For less heat, remove seeds and ribs from the slices.

    Gently bruise 2 sage leaves per cocktail by clapping them between your palms to release oils; reserve 1 extra leaf for floating garnish.

Build & Shake

    If you want a salted rim: rub a lime wedge around the glass rim and dip into a shallow plate with coarse or smoked salt (use ~0.25 tsp).

    In a cocktail shaker, muddle the 2 jalapeño slices with the bruised sage leaves and 0.5 oz ginger syrup lightly — just 3–4 gentle presses to release aromatics and a touch of heat without overworking bitterness.

    Add 2 oz aquavit, 0.75 oz blue curaçao, 1 oz fresh pear juice, and 0.5 oz fresh lime juice to the shaker. Fill shaker with ice (about 1 cup).

    Shake vigorously for 12–15 seconds until the outside of the shaker is cold and well-chilled (this both chills and dilutes to balance flavors).

Strain & Serve

    Double-strain the cocktail into a chilled coupe or rocks glass over fresh ice (or neat in a coupe if preferred) using a fine mesh strainer to remove jalapeño bits and sage fragments.

    Carefully float the extra sage leaf on top of the drink for aroma. Garnish the rim or perched on the glass with the pear slice.

    Optional: if you want extra visual contrast, add a tiny drop of blue curaçao on top to intensify color or a quick spray of pear liqueur on the surface for aroma (not included in quantities).

    Serve immediately. Advise guests the cocktail has a gentle heat from jalapeño and aromatic sage; adjust future batches by reducing jalapeño or ginger syrup to taste.
