Method

Cocktail

  1. 1

    Prepare shaker

Fill a cocktail shaker halfway with ice (large cubes are fine). This chills the shaker and prevents excessive dilution while you measure ingredients.

  2. 2

    Combine ingredients

Add 1.5 oz dark rum, 0.75 oz Campari, 1.5 oz fresh pineapple juice, 0.5 oz fresh lime juice, and 0.5 oz simple syrup into the shaker.

  3. 3

    Shake

Cap the shaker and shake vigorously for 10-15 seconds until the shaker is cold to the touch and slightly frosted. This both chills and lightly dilutes the mixture for balance.

  4. 4

    Prepare glass

Fill a rocks glass or double old-fashioned glass with crushed ice (or a large ice cube if you prefer less dilution).

  5. 5

    Strain and serve

Double-strain the shaken cocktail over the prepared ice using a Hawthorne strainer and a fine mesh strainer (or just the Hawthorne if you don't have a fine mesh). This removes small ice shards and any pulp for a smoother sip.

Garnish (optional)

  1. 6

Skewer a maraschino cherry and a small pineapple wedge (if using) or tuck a mint sprig into the glass beside the ice. Place the garnish on top of the drink for aroma and visual contrast.
